Pasta Salad


My husband and kids beg me to make this particular Pasta Dish, and it doesn’t matter what time of year it is.    I do make it more in the Summer time than any other season, simply because I can make this and fry up a hamburger on the grill, and ta-da, dinner is served.   Or we will just eat this for supper , if it is just my hubby and myself.     I admit, that doesn’t happen often, as we almost always have one or two of the kids/grandkids home at dinnertime.

At any rate, this has been a family favorite in our household for years, so I thought I would share it with y’all!!    Give it a try tonight, it is light and delicious and best part……..Mom doesn’t really have to cook!!


1 pkg Angel Hair Spaghetti
1 bottle Italian Dressing (your favorite brand)
Can of sliced olives, drained
2 or 3 Cucumbers, peeled and diced
3 Green Onions , sliced and diced
1 Bell Pepper, sliced and diced
1 Bottle Salad Supreme (found in spice isle at grocery store)
(Any other veggies that you may like to add is great in this)pasta-salad






Cook your spaghetti, like you normally would, drain and set aside in a large bowl. Add your chopped up veggies and olives. Pour the whole bottle of Italian Dressing over the mixture in bowl. (yes , I do mean the whole bottle!!)  Pour about half the bottle of Salad Supreme, and mix all together. Cover and refrigerate for several hours until the Pasta Salad is chilled. Serve and eat!!

The Weaver

Emotional Days

We had a good day, although it was an emotional and busy one. It started out with the girls (granddaughters) going to their first counseling appointment. This is something that they have needed to have in place for about 6 months, but just wasn’t possible until recently.

I am very blessed to have found a wonderful woman that the girls instantly “clicked” with. I must admit that I wasn’t prepared for the reaction that I saw in the youngest granddaughter, Natalie. I knew that Angela was going to find it easy to talk with a counselor, and I thought that Natalie would just follow along. However, what I saw today after our initial “meet and greet” with the counselor was a little girl who was all of sudden faced with the fact that she might have to deal with some of the feelings that she has been burying down deep. Because of her age, she doesn’t know how to verbally express that, so instead, those emotions and fears come out in her behavior. She has always been the happy child, that is always smiling and doesn’t let you know that she is upset by anything. However, what I saw today after our counseling appointment was a little girl that was crying at the drop of a hat and being extremely combative . She is hurt, mad and confused. It breaks my heart to watch them go through this, and all I can do is love on them and pray.

Her sister, Angela, is the child who “wears her heart on her sleeve”. She has no problem verbalizing what is going on and how she feels about things. They are very much like a lot of sisters, total opposites. I am thankful that both of them have begun the process of starting to sort through all the feelings and emotions over how their life has changed this past year. I pray that God gives me the words and wisdom to help guide them, to help them become the beautiful , healthy strong young women that I know they will be.
After our emotional morning, I decided it was time to go have a little pampering time, so off to the Nail Salon we went. They both got to pick out a Nail design they wanted . I loved the design that Natalie picked, although I have to say, it was a challenge for our Nail Tech to get it on her tiny little toes. Once again, total opposites. Natalie had her toes done and Angela had her nails painted.

We rounded off our day with their Softball game, which we WON! It was only the second game of the season that they have won, so it was a great end to a busy Saturday!

Bowling Fun for Free!!

bowlingI have been looking for things to keep the granddaughters busy this summer and I found this great program that is being offered to kids under the age of 15. Your kids can bowl 2 FREE games , 5 days of the week at a bunch of different bowling alleys around the United States. I am in Tennessee, and signed up the girls in literally less than 5 minutes. Right after I signed them up, I received coupons in my email, for the week’s worth of bowling passes. They have certain hours that we are able to take advantage of the program, but for our family, it is going to be great!!

My girls should be Pro Bowlers by the end of the Summer! Well, maybe at least they won’t be using the guard rails anymore and not be throwing gutter balls. Either way, I know we are in for a fun filled Summer, with lots of Bowling in our Future. What a great way to get other mom’s together that you know and all of you take your kids at the same time, and get a little competition going among the kids.

They even offer a Family Pass, so that you can add up to 4 adults for a one time price of $28.95. If you purchase the Family Pass, then you and the family can all go bowling up to 2 games a day, during designated hours and not have to pay any additional money out of pocket! I am so excited about this program and I hope that this post helps you and your family have a great Summer time activity!!

Hamburger Casserole

This is one of my family’s favorite casseroles. It has the vegetables that I want them to eat and the french fries that even my “picky” eaters will eat.

1 lb hamburger
1 pkg Frozen French Fries
1 pkg California Style Frozen Vegetables
1 can of Cream of Mushroom Soup ( I have used cream of chicken in a pinch when out of mushroom)
Several Cups of shredded cheese

Cook French Fries like you normally would, according to package . In the meantime, brown hamburger and drain grease. Put hamburger into a large bowl and add the Frozen Vegetables. Add can of Cream of Mushroom Soup and mix up . Spray a 9 x 14 pan with non stick spray. Line the bottom of the pan with the french fries. ( you may have a handful left over ) Then spread the hamburger/frozen veggie mixture on the top of the french fries. Put several handfuls of shredded cheese on the top. You want enough to cover the whole dish. Bake in 350 degree oven for about 45 minutes.

This is perfect to make up the night before, put in the fridge and pull it out and cook when you get home from work.
