Buckeye Cookies

  • 1 Box Fudge Brownie Mix
  • 4 oz Cream Cheese, softened
  • 1/4 cup Butter, melted
  • 1 Large Egg
  • 1 Cup Peanut Butter
  • 1 Cup Powdered Sugar
  • 1 Cup Semi-Sweet Chocolate Chips

    Preheat oven to 350 degrees.
    Combine brownie mix, butter ,cream cheese, and egg in a bowl , blend together using a mixer.
    (if you have a Kitchen Aide, I strongly recommend using it as this is a thick batter!)
    Scoop onto cookie sheet that is lined with parchment paper. You will use either a scoop for this or teaspoon with generous amounts. Bake cookies for 14 to 15 minutes.
    While cookies are baking, mix powdered sugar and peanut butter in another bowl. Shape this into small balls about 1 inch big. As soon as cookies come out of oven, place the peanut butter ball in the middle of the cookie.
    Melt chocolate chips in microwave. Start melting these at about 1 minute at a time. Pull the bowl out, stir it and place back in microwave for another minute, continuing until they are melted. Spoon a small amount over the top of the peanut butter ball on cookie. Let cool, and enjoy!
    Makes about 24 cookies.

    How My Blog Has Developed Over Time

    I realized the other day that I have been blogging for 7 years as of December of this year, 2021.   It really doesn’t seem as though it has been that long.  As the saying goes, where has the time gone?   The funny part about blogging , at least my blog, is that it began with me doing one thing and then within a year or so of that, morphed into something else. I started out reviewing products for some sellers that I was working with directly and as the years went by, it has become a blog about me raising my grandchildren and all things related to parenting and/or grandparenting.  I tend to do a lot of giveaways on my blog, simple because I enjoy giving out free stuff to my followers!    read more

    How to keep your kids busy during the holiday break

    During the summer your kids can go outside and play from sun up to sundown. They can ride bikes, swing on their swing set, or play on a slip n slide. But in the winter in most climates, it is too cold during their holiday break to play outside. 

    My kids typically get a two or three week break over Christmas and New Years’ holidays. That is at minimum 14 days to figure out how to keep my kids occupied. Now you can take out a few days as we typically travel to see family and celebrate Christmas. But that still leaves 10+ days to find something to keep my kids entertained. read more

    Sore Throat Tea

    I found this recipe someplace on the internet one day as I was scrolling. I wish I could give credit where it is due, but I simply don’t recall where I found it.

    My husband has always made what our kids have called “honey tea” when they were sick with chest colds and/or a sore throat. This is an elevated version and it makes it simple to have on hand for when somebody gets that Fall/Winter time crud! You know when what I am talking about, your throat is extremely sore, your coughing you fool head off and your chest is burning with congestion! read more
